Menu Planning - February

My eating habits are poor, better than they used to be, but that's not saying much. Given the choice I would happily never eat again, so motivating myself to eat can be hard, and if it's something new, near impossible. The majority of the time our evening meal is reasonably healthy with a few different veg, some beans or legumes and not too much sugar or salt, but the rest of the time it is not pretty. 


I do not want to make soup

Left to my own devices I am a convenience eater, I will grab whatever is easiest and go with it, even making a sandwich seems a bit of a faff for a weekday lunch, generating all that washing up just for the sake of having eaten something. My lunch plan is have a few easy to grab things that are reasonably healthy, and eat them. What these things are doesn't really matter, but I'm thinking some toasted seeds, maybe some nuts, fruit if I must, houmous obviously, whatever veg is chopped or small enough to eat whole and let that be that.

I'd fallen out of the habit of writing a menu plan but sat down to create one yesterday, it took  while but now I don't have to think about it again, I just need to look at the list and do as it says. Writing a monthly plan is much easier for me than having to keep thinking about it week after week, I can buy anything I need for the pantry in one biggish shopping trip so everything is ready to go. 


Colour coded for easy, or complexity, I can't decide. Purple - pantry items (pantry includes fridge and ice box). Green - something added to the shopping list. Pink - leftovers. Orange - we're out and about doing something. In the middle in black are the cookbooks and page numbers I might need and far side are the shopping list items. As the veg box varies each week there's some vagueness to allow for unexpected or unusual things. 
Yesterday I ate an apple for the first time in living memory, maybe I'll eat another one today, who knows!
