Here is my recipe for Lemon and Dill Roasted Salmon. I am sure that I found it on Pinterest somewhere but I made a few of my own variations. I say that this is farmer approved... kind of. He likes it, he will eat it, but he would much rather me makes something else. I can't blame him, I married a farmer, he likes beef...and pork. But like I said he does eat this and I think the fabulous "sauce" that goes over top definitely helps.
Let's start with the sauce. This is all to taste. Unless baking I do not measure things. Mainly because I am just cooking for two people, I don't need a whole container of this sauce. So I start with about a cup sour cream ( I use Greek yogurt), and plenty of dill. Fresh is the best, but not always available, I use Dill Weed, the juice from 1/2 lemon and a dash of salt (I use kosher).
Mix it all up and refrigerate until your salmon is done.
I think an important step is making sure you have a good piece of Salmon. I normally always get ours at Costco and its always very good.
Place on a foil lined baking sheet and drizzle with olive oil and the other half of your lemon.
Season both sides the salmon with a little bit of kosher salt and some more dill.
Then add fresh garlic
And some sliced lemons.
Bake at 400° for 12-15 minutes and the last couple of minutes I usually turn on the broiler to get the edges a little crispier. Garnish the top of your salmon with the Dill Sauce and serve to your very hungry farmer.
